My Simple Go-To Breakfast Meals

Hey friends! So I’ve been loving trying out new breakfast ideas lately. Especially since it’s my favorite meal of the day and the most important one. With every meal I do my best to make sure I have a good amount of healthy proteins, carbs, and fats.
And because my meals were starting to get repetitive and boring, I’ve been forcing myself to try out new recipes and food combinations. I get a lot of my inspiration from watching What I Eat in a Day videos. They’re my favorites.
So today I’m sharing my favorite go to breakfast meals with you guys. After trying a few different meal ideas, these are the one’s I always come back to because they’re just that good.

Avocado Toast
I think I saw close to a hundred photos and videos of avocado toast before I ever tried making it for myself. Before this I didn’t like to eat avocado because it didn’t taste like anything to me. But once I tried it with the toast and egg I realize its actually really good.
Now I’m not a fan of sunny side up eggs myself, but what I like to do is mix my avocado with everything but the bagel seasoning and add a fried egg on top with red pepper flakes. It adds so much flavor and is a nice savory change from my usual sweet breakfasts.
Apple Cinnamon Crumble
Okay so this is typically a dessert which I also love but I found a way to turn it into a delicious and quick breakfast. All you have to do is slice and dice an apple into small to medium sized pieces. Then you caramelize them on the stove with a little maple syrup, oats, and cinnamon and you’re good to go! All of the flavor of an apple crumble but light enough for breakfast. Of course you could always eat a real apple crumble if that’s what you’re craving.
Blueberry Chocolate Oatmeal
I love oatmeal. I don’t know why it took me over 20 years before I tried making it, but ever since I can never let it go. But I can’t just eat it any type of way. There are 3 things that I require my oatmeal to have: Almond milk, Brown Sugar, and Fruit. Of course anything else I add is a bonus.
My favorite fruits to add to my oatmeal are blueberries, strawberries, and apples. I also like to add granola for some crunch and chocolate on those days when I want to satisfy my sweet tooth.


Blueberry Banana Pancakes
Pancakes have become a weekend specialty. I don’t have as much time in the mornings during the week like I have on the weekend so I like to slow down my meals during the two days I don’t have to work.
That means making delicious blueberry banana pancakes on Sundays. The best thing to do is add half of the banana slices to the pancake mix along with a few blueberries so that you can have some fruit with every bite.
To make this more of a well rounded meal you can always some eggs and yogurt o the side.
Banana Bread
As you can see there’s a theme here. I love fruit in any form. One thing I like about banana bread is that you can have it anytime. It can be breakfast, a snack, or desert.
I like to eat it for breakfast because it’s easy to make and it’s quick for me to grab in the mornings when I’m in a rush. A couple of slices of bread with some peanut butter on top and a smoothie makes a convenient to-go meal.
That’s all I have for my favorites as of now but I’m always looking to add to the list. Don’t be afraid to step out and try something new. You never know, you might love it. In the meantime I’ll be looking for lunch ideas to share next!
